Sous Chef Liam Mooney Wins well Deserved Award
At Malone Lodge Hotel we are immensely proud of the success of our Sous Chef Liam Mooney in the European Chef of the Year awards.
Liam was awarded the Bronze Award which is very well deserved.
Liam was a finalist in the elite European Chef of the Year competition, run by The European Chef Organisation, this was held in Le Cordon Blue College, Paris on Tuesday 10th January, 2012.
He was one of 6 finalists from Europe, the only Finalist from Ireland, and the only finalist from a non-Michelin starred Restaurant.
This is an incredible achievement at the tender age of 24 and it indicates the bright future Liam has ahead of him in the culinary world.
Liam initially submitted his menu (showcasing local seasonal produce), and was selected to cook his menu in one of two heats in London in late Autumn 2011. There were 15 chefs in each heat and the top 3 from each heat were selected for the final. Liam won his place by creating and cooking the following menu:-
Canapes – Steak Tartare with Quails Egg on Soda Bread
Trio of Irish Cheeses in Celery
Marinated Scallops on Toast
Starter - Tea Smoked Venison
Fish – Seared Scallops with Seaweed Buerre Blanc
Main – Ballyclare Rump of Irish Lamb, Pumpkin Risotto and Sage Jus
Dessert – Guinness Jelly & Yellowman
